Pizza di Spaghetti Recipe (a recipe for leftover spaghetti)
This yummy recipe uses leftover spaghetti with sauce to make a delicious meal. It is vegetarian or meat eater friendly. The leftover spaghetti used in this example is simply 100% whole grain pasta and jar spaghetti sauce. Below is my recipe which I altered from one I found online. Ingredients * 2 large eggs * 1/4 cup milk * 1/2cup cheese (shredded or grated) * Salt and freshly ground black pepper * 2 cups leftover spaghetti * 1/4 cup extra-virgin olive oil Directions In a large bowl, beat eggs, milk and cheese. Season with salt and pepper. Add leftover spaghetti and combine well. In a large 10-inch non-stick skillet, heat extra-virgin olive oil over medium heat. Add spaghetti and egg mixture, spreading evenly and pressing down in pan. Cook until golden brown, about 8 minutes. Carefully invert onto plate, add a little more oil to the pan, and slide mixture back into skillet -OR- use the alternative method that I used in this video which is to cut the pizza di spaghetti into quarters and flip each quarter individually, then re-flatten and push down into pan. Cook the other side for 6 minutes. Turn out onto serving platter and cut into wedges and serve warm. Enjoy!
